How to make pumpkin pancakes or Carnival tortillas

We start the recipe by preparing the pumpkin. To do this, we peel 250 g of pumpkin, cut it into pieces and cook it steamed or in water for about 20 or 30 minutes.

The time may vary, therefore, when we verify that the pumpkin can be easily punctured, we remove it from the pot. If we have cooked it, we drain it well, trying to keep as little water as possible. We prepare the rest of the ingredients.
