Among the many kinds of pancakes or pancakes that we can make, there are oat pancakes, very tasty and satisfying. For this recipe, we can use oat flakes crushed by ourselves to turn them into flour or oatmeal directly, very easy to find in any supermarket. For speed and convenience, we have chosen this last option for our recipe.
To sweeten pancakes, there are also several options. The healthiest option is to use a ripe banana to sweeten as we have done in our recipe for oatmeal and banana pancakes, or some sugar-free fruit compote. Another way to sweeten them without using refined sugar is to use dates. On this occasion, we have used Medjool dateswhich do not need to be soaked, although other types of dates could be used, as long as they are soaked for at least an hour to be able to add them to the dough without difficulty.
Once ready, we have accompanied our oat pancakes with seasonal fruit and nuts. So, all that’s left is to prepare a coffee to enjoy a luxury breakfast.

- 200 g oat flour
- 1 teaspoon chemical booster

How to make oat pancakes
First, put 1 ripe banana or 4 pitted Medjool dates and 250 ml of oat drink in a blender. Blend both ingredients until they are integrated and the mixture does not have many lumps.
Sofia de la TorreWe add 200 g of oat flour to the mixer. If we do not have oat flour, we can use crushed or even whole oat flakes.

Next, we add 1 teaspoon of chemical booster, 1 pinch of salt, 2 eggs and half a teaspoon of cinnamon powder. When we have all the ingredients in the mixer, we blend them and let the dough rest for 15 minutes.

We heat a frying pan, we used a 15 cm one, and we grease it with a little olive oil, sunflower oil or butter. When the pan is hot, pour 1 ladleful of the pancake batter and spread it in circular motions over the entire surface. Cook the pancakes on one side until bubbles start to appear.

At this point, we turn the pancakes over and cook them over low heat on the other side until they are ready.
