Mint and pineapple popsicles, a refreshing combination for summer. These pineapple and mint ones only have two ingredients, but you can add coconut milk or Greek yogurt if you want the result to be creamier. Don’t have mint? They also go well with basil.

How to make the pineapple and mint popsicles

Peel and cut the pineapple into pieces. Blend well with a hand or glass blender. Add a little water if necessary.

Add the mint leaves and blend again. At this point you can also incorporate other fruits or add a couple of tablespoons of Greek yogurt or coconut milk. Pour the mixture into the popsicle molds and cover.
