Prepare all the ingredients to assemble the ice cream sandwiches quickly and thus prevent the ice cream from melting: put 14 cookie-type biscuits on a plate, chop 50 g of pistachios, put 50 g of chopped almonds in a container, chop 50 g of chocolate and melt the remaining 200 g of chocolate for a few seconds in the microwave. We reserve everything.

Once we have these ingredients ready, we take out 1/2 liter of vanilla ice cream and 1/2 liter of chocolate ice cream from the freezer. Using a large ice cream scoop, we take a scoop of ice cream and place it on top of a cookie.

We place another Galician on top and press it a little so that it integrates and the ice cream reaches the edges, but without coming out, so that they are more attractive.
