Spelled bread, also called spelled, has been with us for a long time. It began to be used to make beer and when it was used to make bread, it was intended for the wealthier classes due to its pleasant flavor and texture. Later, spelled ceased to be produced, giving way to other wheat varieties with higher yields. Nowadays spelled is a recovered cereal highly appreciated for its properties.
To make spelled bread, you do not have to subject the dough to long kneading, since it is a delicate cereal and if we worked on it a lot, we would end up with a little compact and crumbly bread. In this recipe, we have used wholemeal spelled flour, yeast, salt and water to do a basic wholemeal spelled bread.
If you like breads with a special touch, you can put some seeds on the surface before baking.

Ingredients for spelled bread for 6 people

- 400 ml of water

- 20 g fresh baker’s yeast

- 500 g wholemeal spelled flour

How to make whole wheat spelled bread
We slightly heat 400 ml of water. It shouldn’t be hot, just warm. In a bowl, put 20 g of fresh baker’s yeast and add a little warm water (enough to dissolve the yeast well). We let the yeast rest with the warm water while we prepare the rest of the ingredients.
sofia de la torreIn a large bowl, we put 500 g of whole spelled flour with 10 g of salt.
Pour the yeast dissolved in the warm water, in the rest of the water and mix well.
sofia de la torreMake a hole in the bowl with the flour and pour in the warm water with the dissolved yeast.
sofia de la torreLightly knead until all the ingredients are mixed. This will not take us more than 5 minutes.
sofia de la torreCover the bowl with a cloth and let it rest until it doubles its volume.
sofia de la torreThe rising time can range between 1 and 2 hours, depending on the temperature of the room where you leave the dough. In our case, the bread was made on a very hot day and it took only 1 hour.
sofia de la torreRoll out the dough and fold it on itself to take it to a 16 cm high rectangular mold, which we will have greased with oil all over its surface. With the oven preheated to 200 ºC, and with heat above and below, we put the mold in the oven and let the bread bake for 20 minutes. After that time, we lower the oven temperature to 180 ºC and continue baking the bread for another 25 minutes.
sofia de la torreOnce the baking time has elapsed, we remove the mold from the oven, remove the spelled bread from the mold and let it rest on a wire rack.
