How to make banana omelette
STEP 1.
- The first thing we have to do is cut the banana into slices of about 3 centimeters and put them in a saucepan.
- Cover with water and add a pinch of salt.
- Cook the banana slices over medium-high heat for about 20-25 minutes.
- Meanwhile, peel and dice the sweet onion and cook it over medium-low heat in a pan with 15 ml of extra virgin olive oil.
- Season the onion and cook it for 10 minutes. Once the onion has been done, remove it from the pan and reserve it until use.
- After 20-25 minutes of cooking the banana, we will check if it is ready by poking a slice with a fork, if it does not offer resistance it will already be cooked.
- Remove the slices from the cooking water and wait a few minutes before proceeding to remove the skin.
- Once we have the banana cooked and skinless, we proceed to cut it into flakes.
- We will brown these flakes in a pan with 15 ml of extra virgin olive oil.
- After about 10 minutes of cooking, the ripe banana flakes should have a slightly golden appearance.
- Remove from heat and reserve until use.
- We proceed to crack the 5 eggs in a large bowl.
- We beat them lightly, without foaming.
- Next, add the poached onion and the banana flakes to the bowl with the beaten eggs.
- Season and mix lightly until integrated.
- Grease the pan with a pinch of olive oil and heat it over high heat.
- Add half of the mixture, reduce the heat to a minimum and when we see that the edges begin to set, we turn it over with the help of a plate.
- Curdle the tortilla for another minute on the other side and remove it to a plate to proceed in the same way with the other half of the mixture.
- Cooking times will vary slightly depending on the curdling point you like.
- We plate the two tortillas and serve them immediately decorated with some fresh parsley leaves.
- If you want, you can also choose to make the tortilla using the entire mixture, thus obtaining a larger tortilla.
- For this I recommend using a pan with a diameter of 18-20 centimeters.
