Cook the sliced banana in abundant water with a pinch of salt for 20-25 minutes.
Meanwhile, saute the diced onion in a skillet with oil over medium-low heat. Once done, reserve it until use
Check the cooking point of the banana, remove it from the saucepan and peel it
Cut the banana into slices and brown them in a pan with a little oil
When the banana flakes are golden, remove them from the pan and set them aside.
In a large bowl, lightly beat the eggs.
Add the poached onion, the banana flakes, season with salt and pepper and mix until integrated
Grease a frying pan and heat it. Add half of the mixture, reduce the heat to a minimum and flip when the edges begin to set
Cook the tortilla for another minute, remove it to a plate and proceed in the same way with the other half of the mixture.
Plate both tortillas and serve immediately.
