Delicious and easy watermelon popsicles made with fresh fruit

Summer arrives and with it, the poles. Today we propose some watermelon popsicles, perfect for the little ones and not so little ones to enjoy a homemade, refreshing and delicious dessert.

For the red watermelon layer:

    • 400 g fresh watermelon
    • 50ml lemon juice
    • 50g sugar
    • 25 chocolate chips

For the yellow lemon layer:

    • 50ml lemon juice
    • 60 g of condensed milk
    • 1 tablespoon Greek yogurt

For the green kiwi layer:

How to make watermelon popsicles

We weighed and measured the ingredients, and began by making the watermelon red layer. First, we cut the 400 g of watermelon into pieces.

In a processor or in the glass of a blender, we put the pieces of watermelon with 50 g of sugar and 50 g of lemon juice. We crush everything together until we have a puree. We reserve it in the fridge while we prepare the other two layers.

Next we prepare the lemon yellow layer. To do this, we mix 50 ml of lemon juice with 60 g of condensed milk and 1 tablespoon of Greek yogurt. We crush everything and reserve it

Finally, we prepare the last kiwi green layer. Mix 30 ml of lemon juice, 40 g of condensed milk and 1 chopped green kiwi and blend until obtaining a puree. When we have the kiwi cream ready, we reserve it in the fridge until the moment of using it

How to assemble the watermelon popsicles

The assembly of the watermelon poles will depend a bit on each mold depending on whether they are vertical, horizontal or in the shape of a watermelon. With typical popsicle moulds, we will have to assemble layer by layer and freeze them after adding each layer so that they do not mix. So first, we pour the watermelon mixture into about 2/3 of each mold, and put them in the freezer for 1 hour to freeze and harden a bit.

After 1 hour, we remove the popsicles from the freezer and place the chocolate chips in the red layer with the help of some tongs. We freeze the molds again for another half hour so that this layer hardens a bit and does not mix with the next one.

Next, we make the lemon layer by pouring a little of the mixture corresponding to this layer, in each mold. We keep the molds in the freezer for 1 more hour.

Finally, we have to make the green layer that simulates the skin of the watermelon. To do this, we pour a small amount of the mixture corresponding to this layer into each mold. At this time, we insert the ice cream sticks and store them in the freezer for 3 more hours so that the poles finish freezing.

If we use horizontal watermelon-shaped molds, first we put the pieces of chocolate in the holes for it, and then a layer of kiwi on the edges, which already have the groove reserved for it. We keep the poles in the freezer for 1 hour. In this case, we then add the watermelon puree until the mold is filled, place the sticks, cover and freeze for 3 hours. With these molds, we have to omit the white layer, as we have no way to add it without mixing it with the watermelon layer.

When the popsicles are already frozen and before consuming, we remove them from the molds. To be able to unmold them easily, we give them a little heat with our hands and they are ready to taste.

Easy preparation summary
