Paciencias, the traditional sweet from Soria that is easy to prepare

The Paciencias are a sweet from Soriano halfway between a candy and a cookie. The ones in the town of Almazán are very famous, and it is impossible to leave there without having tried them. Its name tells us how we have to taste them: that is, you have to be patient. Because? Well, because we can’t eat them quickly, we have to keep them in our mouths for a few moments, because at first they are very hard. They are then moistened with saliva and they start to melt in the mouth like a candy Do you dare to try them?

The recipe to prepare patience is very simple because basically this sweet is made with a meringue with flour. Then we have to shape it into small cookies and bake them over high heat. The size is important, that they are not too big to be able to enjoy them in a single bite. With the amounts of the recipe, about 40 units come out. Yes, they seem like a lot, but there is no need to worry as they can be kept perfectly for several days and even weeks in a tightly closed hermetic container.

    • 75g sugar
    • Zest of 1 lemon

We start by putting the egg whites in a large bowl. Add a pinch of salt and beat the egg whites until almost stiff. This step can be done by hand or with electric rods.

Preheat the oven to 200ºC. When it is hot, we bake the batch of patiences for about 10 minutes or until we see that the edges begin to brown.
