    • 100 g oat flour
    • 1 teaspoon yeast or baking soda
    • 200 g almond butter or any nut butter
    • 80 g whole brown sugar, coconut or panela sugar

    • 3 drops of vanilla flavoring

How to make healthy cookies

The first thing we must do is preheat the oven to 180º C with heat up and down.

While our oven reaches the temperature, we will prepare the dough for our delicious cookies. To do this, we start by mixing in a large bowl the almond butter with whole sugar and two eggs until there is a dense mass without lumps.

in the same bowl add the oat flakes, the chopped nuts and the chocolate chips and mix well by hand so that all the ingredients are distributed in the dough. In our case, we have opted for 100% raw cacao nibs with no added sugar, although if you want to give your cookies a sweeter touch you can choose the typical chocolate chips (they usually have 52% cacao) or chop two ounces of your favorite chocolate bar

Once integrated, it is time to shape our cookies. Place a parchment paper on the baking tray and, with your hands moistened in water, begin to form small balls until you finish all the dough. By using yeast, the cookies will grow a little, so it is preferable to place them with a little space between them.

Rounded cookies for bakingFinally, once placed on the tray, we flatten them a little with our hands so that its shape is more like a cookie than a bun. And ready to bake!

Baked Chocolate CookiesWe put the tray in the oven and leave them cook for about 10 minutes at 180ºC hot up and down. It is important that you keep an eye on it, since depending on the power of your oven and the size that you have given to your cookies, they will take more or less to be ready.

This recipe admits a few variations, and they come out just as delicious. For example, oat flour can be substituted for regular, whole wheat, or spelled flour; and sugar, which you can opt for normal sugar, date sugar, honey or xylitol. Of course, the fact of using a granulated sweetener such as whole cane sugar will help us to make the cookies much more crisp, since when it cools, it hardens.
