An hour before preparing the cookie dough, remove the butter and egg from the fridge so that they are at room temperature. We weigh and measure the rest of the ingredients and once the butter is about to melt, we make the dough. Sift the flour with the salt. Beat the butter with the sugar until the mixture is creamy and has doubled in volume.

We continue beating and when it is fully integrated we add the essence of vanilla. Finally, and without stopping beating, we are incorporating the flour little by little.

We will never do it all at once, but several times so that it integrates better. When the dough is ready, we put one part in a pastry bag with a curly nozzle.

Once the rest time of the other mass has elapsed and it has hardened, we stretch it. For this we will use a pasta roller with stops on the sides, which will help us achieve a uniform thickness. In our case it will be 7 mm.

We will gather and stretch again the dough that is left over until we have them all formed. Once we have the cookies ready, we brush them with egg white, sprinkle them with granulated sugar and store them in the fridge.

In this way we will make sure that they are completely cold when they enter the oven.

We turn on the oven at 170 °C and when it has reached the marked temperature we bake the cookies for 15 minutes or until they begin to turn golden. Baking times are approximate, as each oven is different. When they are ready, we remove them and carefully place them on a cooling rack.

When they are hot they are still soft and brittle, but once they are cold they harden.

We are placing them in a box, where they will be kept for several weeks, if they last. We can use cupcake molds to separate them and to protect them, so they won’t move and won’t break.
