Homemade cheese bread, classic recipe for the tastiest rolls

Homemade cheese bread are light, crunchy on the outside and with a very tender crumb and tasty inside. These breads are very similar to cassava bread or Brazilian cheese bread, although this time we are going to prepare them with wheat flour.

To make these breads, we are going to use regular flour because they are more tender than if we used plain flour. These breads are enriched with milk, butter, egg and of course, lots of cheese.

As for the cheese, we are interested in a tasty one although we can select a cheese to our liking. We have chosen a semi-cured cheddar, but a Manchego would also go very well. To make the loaves more attractive, we have put half of the white cheddar and the other half orange.

On this occasion we have proceeded to kneaded with the kneading machine and it has taken us a total of 20 minutes. If you opt for kneading by hand, you will have to have more time, at least 30 minutes.

Cheese Bread Ingredients

    • 500 g of wheat flour
    • 15g sugar
    • 15 g dry baker’s yeast
    • 10g of salt
    • 2 eggs (1 for the dough and 1 to paint the breads)
    • 220 ml of milk at room temperature
    • 75 g butter at room temperature
    • 220g semi-mature cheddar cheese (110 white cheddar and 110 orange cheddar)

How to make homemade cheese bread

To start with the cheese bread dough, we put in a large bowl 500 g of wheat flour, 15 g of sugar, 15 g of dry baker’s yeast and 10 g of salt.

Mix the dry ingredients and make a volcano in the center to add 1 egg and 220 ml of milk at room temperature.

We work the dough by hand or with the hook of the kneading machine at medium speed between 8 and 10 minutes. Gradually add 75 g of butter at room temperature. Add the butter in batches, adding more as the dough absorbs it.

Once we have incorporated all the butter, we work the dough for another 8 to 10 minutes at medium speed. The dough is done when it is elastic and shiny. If we choose to knead by hand, we will need more time to get this dough.

To finish the dough, add 100 g of grated white semi-mature cheddar cheese and 100 g of grated orange semi-mature cheddar cheese. We reserve the remaining 20 g to put on top of the bread before baking.

We work the dough again with the hook at medium speed for a couple of minutes, enough to incorporate the cheese and that it is distributed throughout the dough. Grease a bowl with oil and pour the dough into it. We cover it with a cloth and let it double its volume for 1 hour in a warm place.

Once the fermentation time has elapsed, the dough will have doubled its volume. We remove the air from the dough to be able to form the bread balls.

We form uniform bread balls. We have made 25 g balls and about 48 have come out. As they have to rise and will also grow somewhat in the oven, we will leave a space of at least a couple of cm between the balls of dough. We cover the masses again with a cloth and let them ferment again, already formed, for another 30 minutes.

Before taking the bread to the oven, we paint it with a little beaten egg and distribute the 20 g of cheese that we had reserved before on the surface of all the breads. We bake for 30 minutes at a medium height with the oven preheated to 180 ºC and heat up and down.

After the baking time has elapsed, we remove the tray from the oven and serve the freshly made breads, although if we were not going to eat them at that moment, it would be enough to heat them for about 10 seconds in the microwave.
