Cornbread, traditional Mexican cake dessert

The secret of this cornbread is to use fresh and raw corn kernels, which makes it a bread with a dense and moist crumb. Among the different recipes and versions that we can find of cornbread, there are those who add corn flour or wheat flour to get a fluffier and more airy crumb, although the traditional recipe does not include it. In this recipe, we tell you how to make a corn bread without flour of any kind, in a simple and traditional way, only with grains of corn.

    • 20 g powdered milk
    • 50g of sugar
    • 1 pinch of salt
    • 1 teaspoon cinnamon

How to make cornbread

We weigh the ingredients of the recipe and turn on the oven to 190 ºC so that it preheats while we prepare the cornbread dough. Separately, line a round mold 18 cm in diameter with baking paper and melt 100 g of butter.

We put 250 g of corn and 3 eggs in a processor or blender and blend them until we obtain a cream.

Next, we add 20 g of powdered milk and 50 g of sugar and grind the whole again.

Finally, add 1 pinch of salt, 1 teaspoon of cinnamon, 1 teaspoon of baking powder and, finally, add the 100 g of melted butter, which will have cooled down a bit.
