The creator of this marvel is Santiago Rivera, who has shared his original recipe publicly so that everyone, from our homes, can enjoy it. Despite this, if we have the opportunity to visit San Sebastián, we must schedule an essential visit to the famous La Viña restaurant, to pay us a good tribute and, as a climax, to be able to enjoy its famous cake live in the place where it has been originally conceived.

The recipe that we detail below is from the cake adapted to home consumption. With the restaurant’s formula, we would obtain a cake of about 2 kg, for 12 people, which could be perfect for when we have guests. If we are looking for a dessert of this size, we would simply have to multiply the quantities indicated in our recipe by 1.75 and use a 24 cm mold.

The preparation of this dessert does not entail any difficulties. It could well be prepared by combining all the ingredients in a bowl and homogenizing the mixture with a stick blender or with a food processor. However, the ingredients that make up the recipe are very easy to integrate manually with a few simple rodsthus dirtying the minimum.

How to make La Viña cheesecake

First of all, we preheat the oven to 200 ºC. We put 570 g of cream cheese in a wide bowl and add 4 eggs, one by one.

We remove and integrate the mixture well with some rods, after adding each egg.

work the mixtureNext, we add 230 g of sugar and again homogenize the mixture with the help of our rods.

pour the sugarSubsequently, we add 10 g of flour and stir again with the rods, integrating the mixture.

Finally, add 285 ml of cream and once again, stir well and integrate all the ingredients.

include creamOnce the mixture is prepared, we crumple up a sheet of parchment paper for the oven and wet it a little so that it is easier for us to place it in the mold. After this, we stretch the sheet with our hands, shake it a little to remove excess water and place it on the mold.

Line the entire moldPour the cheese mixture into the mold with the parchment paper already placed.

pour into moldWe put the mold in the oven at 200 ºC, with heat above and below, and on the oven rack at a medium-low height. Bake for 40 minutes, until the surface acquires a characteristic golden hue. If before 40 minutes we see that our cake is browning excessively, we can cover the surface with aluminum foil to prevent it from burning while cooking ends. On the contrary, if after 40 minutes our cake is completely pale, we can put the gratin until the surface is golden.

bake mixAfter the corresponding cooking time, we took the mold out of the oven. At this moment, we may have the feeling that our cake has not been cooked enough since when we take it out of the oven we will notice it very shaky and the central part will sink slightly. However, this is completely normal. After about 2 hours of rest out of the oven, the cake will have acquired the perfect texture. Once the resting time has passed, we unmold, carefully removing the parchment paper from the contour and serve or keep cold. Now we only have to enjoy this delight!
